That's fairly easy, but a little tricky to explain in words alone. In Nifskope, the mesh of your object will have an NiTriShape node, which will have a BSLightingShaderProperty node, which will have a BSShaderTextureSet node. That node will have a property that says textures and has a little flower to the right of it. Click the arrow to the left of the word textures, which will cause nine texture slots to appear, each with a purple flower by them. Clicking on the flowers will allow you to select the texture path. The first slot down from the original flower is where you need to put your diffusion map. The one below that is where you need to put your normal map.
