So, I was going to uninstall Oblivion, which did NOT go well, but I've managed to delete everything so now I should be able to install it again. However, whenever I mount the .iso file and run the setup, it tells me to put in an original disk, not a backup! How do I fix this?

The installer checks for a valid, legal disk on installation. Once installed, you may use a genuine backup disk image to play the game.
