It's like asking for an accountant race or a tennis-instructor race which doesn't really make sense in most settings. Generally, Nords, Redguards and Orcs do well as warriors. Assassins come in many varieties, but if you're thinking of the rogue archetype, perhaps a Bosmer or Khajiit would do the trick. There are also hundreds of downloadable custom races if you browse the Races, Classes and Birthsigns category. You can sort by endorsements or downloads to see which have been the most popular.
