Rennn
Try to pick a mercenary or follower, that way you can adventure with them. Also, save before the marriage; it can get buggy.
Tropxe
It makes no difference beyond if are they a follower-type NPC, in which case you can take them out with you. They all open a little store, they all share their profits with you, they all make the same home-cooked meal when you ask for it, they all behave in the exact same way. The only differences are that they keep a bit of their regular dialogue options, so if they normally had the dialogue option "Tell me about the mine", you can still ask them about the mine and they'll respond in the same way as if they've never met you before and as if you're in their original location. That said, I married the woman that is housebound after hurting her legs, and asks you to take a package to her family in the nearby mine. She just seemed kind of cute and I guess there was a bit of a Katawa Shoujo mentality going on with her, too.
Rennn
Plus, special NPC's like Brelyna or Lydia (as the person above me said, more or less) have quite a few more dialogue options.
Tropxe
Yes, but it's the same old stuff they had before, like asking "What is a housecarl?" and their answers are the same as when you first met them. So my point is the same; no one changes at all by marrying them apart from the universal things of making you food once a day, and opening a shop and sharing the profits. It's a shame, but I'm sure it's something that will get a lot of attention from mods.

Pain in the ass you say? No?!!! Really? Would it not be a great joke by the developers to do this on purpose to replicate real marriage.
