FYI you can go in steam (even in offline mode I believe) and tell it not to update skyrim if you right click on the game in your library and go to preferences (or was it properties) whatever was at the bottom. Set it to "Do not automatically update this game" and youll be fine. That's not going to work. Everytime you start skyrim it automatically sets your "do not upgrade status" to "keep it updated".
