Installation instructions are included with each mod. Just copy your entire Oblivion folder somewhere, and if you mess up your game beyond repair all you need to do is delete the broken Oblivion folder move the copied, still intact Oblivion folder back to the original place. As Lanceor said, also back up your saves. Certain mods are impossible to get rid of if you save with their effects active. Also, there's a site called Planet Elder Scrolls that has many good mods for Oblivion and Morrowind. Many of them are different from the ones on the Nexus.
