Fnvedit is a start it helps show you and nmm shows which mod is missing in plugins section loot is very useful too

Thing is that message never shows up for me but instead the basic "Fallout NV is not responding" and after that shows up it just closes.

Fallout Mod Manager (FOMM) has a function where you can get a list of your saves and a list of mods that were used in each save. https://www.nexusmods.com/newvegas/mods/54991/?

Thing is that never works for me as whenever I load it it crashes and says something went wrong.

Please see the "Windows Error Messages" section of the wiki "How to read most Bethesda game error logs" article.

That message (Access to the path 'C:\Games\FalloutNV\mods' is denied) is saying you did not set the "access permissions" on your "C:\Games" folder correctly when you created it, so when you installed Steam under that folder it did not inherit the correct permissions. See "File and Folder Permissions". Note you must be logged in as the "Owner" account of that folder, or "Take Ownership" in order to change permissions.

My recommendation would be to fix the permissions on the "Games" folder to allow at least "System", "Administrators", and "Users": "Full Control", and then enable (check) the box: "Replace all child object permissions with inheritable permissions from this object".
