I had an issue early on with ingame dialogs that would cause CTDs. I installed Better MessageBox Controls to solve that one.

Hello all.
Long story short, a few years ago, I remember playing with some mods among which was a skimpy armor one. It basically replaced all female armor with bikini armors (yeah, very original), but for Ebony Chainmail there was an armor on the screenshot. It seems to me that most of the bikinis were taken from other mods, but I may misremember.

Time has passed, and now I can't remember what the mod was called or if it even was from Nexus, so any help in searching for it would be appreciated.

Hmm... ok, so it sounds like you try to open menus and the game ctds, right?

First thing to ask then is "Have you installed any mods that changes the vanilla skyrim menu system in any way?" 
(as shipped, no modding) 

if you answer "no I have not modded my game at all this is a vanilla installation", idk, can't help you.

But if you answered yes, I would first suspect any menu altering mod you've installed. 

1) is it for the game version you have installed? This really *does make a difference for LE/SE/"AE" (as well as their prerequisite mods). Some versions of some mods will install into skyrim versions not meant to deal with them and appear to work, (game loads, even savefiles load), until you use the features of said mods.

2)  Has it been updated recently? (see step 1)

3) are all patches covered in your installations (many mods require patches to work side by side with other mods and things can "get interesting" when a particular patch isn't installed.

and keep on that track. SkyUI is quite popular. perhaps something's gummed up with it, IFF you're using it in the first place. But if not that one, any other mod that prettifies  or cool-ifies, or whatever-itizes your menu system could be at fault. Or... it could be an unrelated mod that you failed to install a patch for...etc.

If you get frustrated, try the plodding approach and uninstall one mod at a time, starting with the last installed mod on each iteration, (ie the next uninstallation iteration would be the next-to-last-installed one, and so forth) checking to see if the game works in between each uninstallation step. Works like a champ, although it can be a brutal teacher to teach the lesson  of why its dumb to mass install mods.

I'm currently looking for a mod that allows one to cast magic in one hand and have normal melee attacks with the other while in first person mode. Basically having both hands act independent of each other.

Does anything like that exist? If not, what would I need to do to make something like that?

I don't know if this will let your followers wear multiple rings and amulets for certain.  However, your character certainly would be able to.  So, it might be possible this will let your followers do the same.  There's a lot of information about this mod so have a look and see if it might meet your needs.
