I was wondering if anyone could create a knights templar armor and sword and greatsword like in these pics:

The ones in skyrimnexus are just retextures of ebony armor and novice robes. Also could you create the armor with two light armor versions (one with the white apron w/ cross and the one without the apron) if possible

Knights Templar and martyred many that were captured. The order became a secretive underground society and rumors of their activities and continued existence are legend to this day. The locations of the lost gold, silver, jewels, art and religious artifacts that the Knights Templar acquired and hoarded in their many adventures is also the stuff of fables and lore. The lost Holy Grail, and all of the fabulous tales attached to this famed relic from the Last Supper, is often connected to the Knights Templar.

Well, this one can pass for a pretty decent templar armour IMHO

I tend to use my own shields with it, though:

For weapons, well, that's the easy part. There are plenty of people making good weapons. I can really recommend Jaysus's stuff for example. Or my own stuff, for historical accuracy, although I'm not half as good at texturing them as Jaysus and others are.

E.g., my Arming Swords includes swords that are pretty accurate for the crusader ages. Type XIII and the two-hander Type XIIIa were in fact mainly used in the crusades, since the Saracens weren't using as much plate reinforcemet and a hefty slice worked better than a pierce. While in Europe the Type XII and the two hander Type XIIa were probably the most used swords ever, or at least on par with the later Type XVIII family. Incidentally, the Type XIIa and XIIIa were what passed for a great war sword ("grand espee de guerre") at the time, so that's what that guy would probably use historically.

Or if you just want a great big Zweihänder, you can try the European Greatsword.

Or you can go the cleric route with a good mace: http://skyrim.nexusmods.com/downloads/file.php?id=10980

But as I was saying, the weapons are easy. You're spoiled for choice for weapons on the Nexus, if you have the time to go through that section.
