Bazrolides
Would they have cool empty eyeholes or big error signs? If the second option, what would it take to make them like in the first option (I don't mean the eye glow, I mean the eyes at all)?
Shadeybladey
No idea, actually, but if you try this, make sure you make an esp for it (EG _baz_DraugrEyes.esp) and remove the meshes only with the esp active. Then, with it as a listed mod in your load order, it should override the default eyes. I don't know if you would have to remove the textures as well as the meshes. If you deleted just the textures, I suppose the eyes would have a blank purple/mauve colour. And you might have to do it for a lot of Draugr and maybe make other changes. In fact, you might have to copy all the Draugr in the game into your esp and delete the eye textures from those copies. It's not something I have ever tried.
