Some questions about Illusion magic

I have some questions about Illusion magic. Here is a wiki page on Illusion magic in Skyrim: http://www.uesp.net/wiki/Skyrim:Illusion

How will I know the level of an enemy? Will an enemy have the same level as me? Also, looking at Kindred Mage, it says Illusion spells will work on higher level people - +10 levels to the highest level. The master Illusion spells only work up to level 25 for opponents, so that would be up to level 35 on opponents with the right perk. Can human enemies and NPCs go beyond level 35 in Skyrim? Does this mean that any humans in the game that are level 36 or above are immune to Illusion magic? Would this be the case for animals and undead, daedra, and automatons that are above level 35, as well?

I was thinking about making a character that makes use of Illusion magic, but if enemies that are high enough in level are immune to Illusion spells, than forget about it. It wouldn't be worth it.

I asked this question in another thread but I'll ask here, too. If you use an Illusion spell like calm on a person, can you pickpocket them with ease? Or do the pickpocketing odds stay the same, and if you fail at a pickpocket attempt, they'll snap out of it and talk to you?
