I am using 7.1 surround sound headsets using a spdif external sound card. My audio works fine on every other game and application. I had a similair problem with my G35 headset.What I did to solve it is I went to the manufacturer's website and looked up my hardware and read all about it.You see mine also worked for other games and the problem was really simple too.My headset has a Faked Surround sound switch on it that I accidentally hit. Short story go to the site for your hardware and look to see if there's a switch on your headset. BTW I dont think Skyrim does surround sound.
