Definitely get the Unofficial Patch. Most of the mods suggested above are also great. For graphics and textures, I would strongly recommend taking a look at STEP. You don't have to install every mod STEP recommends, but it's a great starting point for customizing your game, and the mods they recommend have all been tested to work well together.

Midas Magic is one of those mods that people seem to hold in great regard - however, in my experience it is often buggy as it hasn't been updated in a while, very lore-unfriendly and crashes if you look at it funny.. Try it if you like, of course, but I still stand by the combination of Phenderix and Apocalypse.

More mods:

The Paarthurnax Dilemma lets you make a moral choice in a quest:

HERE BE SPOILERS

A dragon named Paarthurnax repented and betrayed Alduin thousands of hears ago and helps you kill him. The Blades, a group of dragonslayers sworn to serve you, demand that you kill him because he's a dragon. The Paarthurnax Dilemma lets you tell them just what they can do with their magical racism.

HERE END SPOILERS.

Castle Grey and Halls of Dovahndor are both excellent castle mods. Unlike some, they won't make your FPS combust.

Forested Skyrim is a little buggy and not lore-friendly, but it is nice not to traipse through boring plains around Whiterun.

Lush Grass and Lush Trees improve grass and tree meshes without FPS hit.

Get Snowy makes you (drumroll please) get snowy.

Dragon Falls Manor is a nice house.

Dragonbone Ebonsteel Armour is endgame armour that looks like Dragonplate should have.

With Dynamic Fires and Fires Hurt, frost spells put out fires, fire spells relight them, and standing in fires does damage.
