The armour is invisible because while the esp for that custom armour mod had been installed correctly, the meshes and textures have not. Kill that NPC, open his corpse to see the name of the armour he is wearing, and you will know which armour mod needs to be reinstalled.

He's marked as essential and won't die and when I pickpocket him his armor doesn't show. Other ideas?

Open the console, type

help <NPC name>

This should display his base ID.

 

Then type

setessential <base ID> 0

 

which should disable his essential flag.

Alternatively, select him in console and type

showinventory

That should list whatever is on his person, use Page Up/Page Down to scroll the information. If however you can't figure out the name of the armor though that, making him unessential will work too. You'll just have to load a savegame then if you don't want that change to be permanent.
