There's a lot of information on the wiki over here: http://www.uesp.net/wiki/Dragonborn:Dragonborn

To answer your post question, though, it won't affect the Fallen quest, nor Odahviing directly, but you can use the Bend Will shout on him to ride him, one of the few named dragons you can ride. Also, you get to explore the whole of Solstheim, an island northeast of Skyrim, somewhat closer to Morrowind. You also get to visit Hermaes Mora's plane of Oblivion, Apocryphia, an endless library where doomed souls search for information within unmarked books for all eternity.

Beyond all that, though, I don't know much. I expect to be pleasantly surprised.

On a slightly tangential note, until I read up on the origin of Bend Will my thought process was: Dragon shout that lets you mount dragons -> shouts are the language of dragons -> did the Dragonborn just learn the words of dragon pickup lines?

I think Bend Will is used to make things fight for you, and riding dragons therefore would be a side effect.

That said, I haven;t played the Dragonborn DLC, so I could be wrong.

Oh, no, you're right. It's just that all I knew about "Bend Will" was that it was a shout that lets you mount dragons, which taken in context with what shouts are made it a bit disconcerting. I mean, here's a phrase in the dragon tongue specifically for one dragon to get on top of another dragon

But it turns out it really is just a shout to order people about, which is considerably less disturbing.

You know, this has actually gotten me curious. You naturally wouldn't see any dragons mating at this time in Skyrim, since Alduin's just resurrected them, but dragons are creatures of power. I can easily imagine that their mating rituals consist of displaying enough power to dominate another dragon in the form of a shout. Only the most powerful dragons would be able to dominate and pass on their genetic information, a pretty good medium for natural selection.

You know, if evolution was a thing on Nirn.

Dragons don't mate, if they all die then they're all dead either untill the next Kalpa comes around and reality reboots, or Alduin ressurects them. Dragons aren't born, they have always existed.

You know, I think I vaguely recall that now. Wonder how I could have forgotten that, the whole timey-wimey aspect of the dragons is one of the coolest things about them.

At one point Odahviing refers to Paarthurnax as "the old one." If dragons have always existed, how can they be different ages?

Because they where created by Akatosh at different times, Alduin being the first and most powerful.
