Extensions not working

I've been trying to install mods using skse for Skyrim SE but whenever I enable an extension through the extensions tab and it asks me to restart and proceeds to remove skyrim from my games list. I've looked up countless guides for hours but every time I think I've figured it out something else goes wrong and I just don't understand.

Try reinstalling Vortex. If the game is being disabled, Vortex should be telling you why.

I've done that and the same issue occurs
