Ok from your answer I can only assume that it is impossible :/

So sad.... Well are there any mods that will prevent you from leveling past 255??? so that I won't get my stats reduced to 1 everytime I level an attribute/skill?

Yeah, it's impossible, without reworking how Oblivion works AND doubling the size of your save file. Well, maybe not double, since not everything has to be changed... >_>*

As far as I'm aware? No, I like having normal stats. I just like to skip level 1-10.

Stats and skills past 100 normally don't give you much benefit. Actually, in the case of speed, strength, and personality, it can become a hindrance. The more strength you have, the harder you hit, the harder you hit, the more durability your weapon may be losing (downside of strength based methods of increasing carry weight). The more speed you have, the faster you move, which can eventually mean slower if your videocard cannot keep up with it, or if your computer cannot handle the rapid loading of many cells quickly, or if you keep having to backtrack because you keep falling off a ledge. With super high personallity, not only will your companions (and horses) almost always be favored by enemies over you, but you may even start getting assault or crime counts from hitting them. Dexterity over 100 provides almost no benefit, wisdom above 100 provides almost no benefit, endurance over 100 only means a little more health per level (too much health can make the game boring). Luck over 100 provides no benefit. Int over 100 is probably the only thing which most would particularly benefit from.

The game was only designed for within the 1-100 range. Mods have provided for going beyond this, but most of what these mods do is just give you more leveling without improving anything. Usually, you're better off just staying with the normal stat values, especially when you have companions, and instead looking for mods that merely change what those stat values mean. Most of the time people using these mods are just trying to do something like increase their carry weight, or magicka pool. Both of these can be done quite easily by changing a few game settings. As far as speed goes, I've found that just giving yourself a lesser power with fortify speed/athletics for when you are wanting to travel long distance tends to be alot more useful in the long run than trying to deal with those values all the time. 100 speed, 100 athletics is still plenty fast, fast enough to make horses useless and make travel time more about how fast you can load cells, instead of how fast you can move through them.

I'm reminded of a scene in Spinal Tap were one of the musicians talks about how they can turn things up to 11 instead of simply making 10 louder. The concept is the same here.

That said, magic effects, like fortify, can push stats to 999, but as mentioned, this can have some unwanted consequences, and ultimately mean very little.

I should think a strength of 255 would be more that enough. But if not then tough luck, that's how Oblivion works. It loves 255.
