Thank you very much! It was super annoying trying to sort things without proper Categories. I spoke too soon. It sorta worked... at first. When I upgraded to 1.5.10 everything was put into a new folder called <No Category> except for 2 uninstalled mods (Torches Cast Shadows and Smoking Torches and Candles). The only way to take these mods out of my manually created Category folders was to install them. They then went into the <No Category> folder. I uninstalled them and they were placed into Categories named Skyrim Special Edition ---> Immersion and Skyrim Special Edition ---> Visuals and Graphics respectively.
