1) Ehm... why the heck do you want to rename the mod launcher?.

Also: your load order sucks, move fallout.esm to the top.

2) search the nexus

3) use fose, don't click it, or decompress the menus.bsa, find the main menu one and edit away the button.

The menus aren't packaged into a .bsa in the first place, so just look in the menus folder in the data folder and look through the xml files there. Just be sure to back them up first before you start deleting stuff.

Also, the reason you're not seeing your own slides is probably because you haven't done the archive invalidation that's necessary for replacement textures and other assets to work. See the button in the FOMM window there? 'Toggle Invalidation' <- this, click that, then try going into the game again and see if they work (assuming you have just put your own textures in the correct folder structure so they override the originals).

That question really isn't relevant to Fallout 3 - I doubt anyone here will be able to help you with it and I'd be very surprised if it was even possible. I'm no expert though, so if you ask on a forum dedicated to that sort of thing you'll probably get a more reliable answer.

As for your other two questions:

In order to change the images that appear when you load the game, you'll need to make some changes to your ini file, specifically these lines:

sWelcomeScreen1=loading_screen01
sWelcomeScreen2=loading_screen_bethsoft
sWelcomeScreen3=loading_screen_BGS
sWelcomeScreen4=loading_screen_legal

In order to make changes to the main menu, you'll also need to make some changes to the XML files found within your "menu" directory. I'm not sure exactly what changes you'll need to make, but you may be able to figure it out by looking around yourself. Of course, you could just use FOSE, as TGBlank suggested - there really isn't any reason not to use it unless you have a version that can't.
