You don't need to listen to bethesda you don't need to install skyrim or update it trough their steam. All you gotta do is make sure steam thinks you have the latest update. Make sure to always keep a clean game file (yes the full 10 GB) on a safe location where steam can't touch it. When they do an update go to your mod manager and disabe all your mods. Then you should delete your game folder at: program files (x86); steam; steamapps; common; delete your game file. Paste your clean game file. Redeploy all your mods. Proceed like nothing happend.
