Skyrim has no geology!

I really hate how the rocks in Skyrim have no structure at all, there is no bedding, no mineralisation, no geological features whatsoever. It has always really bugged me. I know it would be very difficult to retexture the rocks to have such effects due to the fact that they are at all kinds of different orientations but it would certainly be nice. As a Geology student this has always really bugged me.

Pretty hard to do, because according to this mod author,

I don't think there's a single texture in Skyrim as important to the overall appearance of the game as the mountain/rock texture. There are actually two textures, but it's really one "photo" texture, since they have to blend together. They have to appear very similar, or the seams will be extremely obvious. Yep, we're talking about essentially one image to represent everything from a small stone on the ground, to the side of a mountain. That's asking an awful lot of one texture. That's why I call this mod MOUNTAIN OR MOLEHILL..... this rock texture is a small thing, and a very big thing at the same time. So, excuse me, if I make a mountain out of a molehill.

Sadly, unless you were to go and replace every single rock you feel is out of place with a new model that uses its own texture, which is a metric asston of work and would likely be incompatible with just about every exterior cell-modifying mod under the sun, this can't be done.

I know it can't really be done, it just annoys me that bethesda clearly put absolutely no thought into their rocks at all.

I doubt the would have anyway. There's tons of logic gaps in this game. For example, how can an entire city thrive off two farms? Luckily most of this is easily fixed by mods.

However I understand there is a parallax mod available for rock textures

^The two farms thing can be chalked up to space compression. Basically, Whiterun is actually the size you'd expect, with probably hundreds of thousands of people. You just don't see all of them in-game. It's an abstraction. Same with the farms; there are probably dozens or hundreds in-universe.

Exactly. When you're playing a tabletop game the GM might say you're in a city of a million people, but you're not going to talk to about 999,990 of them. And frankly the rock thing is a little ridiculous, too. They're game designers designing a game, not simulating geological formations. If they had built the rock bed accurately and then put that level of detail into evrrything else in the world, they might just be getting around to adding biologically accurate trees to their ecologically accurate forests sometime next year. It's an imaginary world. You have to expect that it is going to exist 90% in your head and only about 10% on paper (or on the screen).
