Well, there's one thing... It's got a humanoid skeleton, too.

 

Ub3rman's comment about a 'final boss' kind of makes me want to see...

A real end-game kind of boss is something no-one's really done before in a mod.

 

A scaled up creature looks okay, but works poorly because of the animations. You could use a conventional skeleton and then animate a few custom attack animations, like how Mehrunes can only stomp and swing his axe.

 

The boss monster could be stationary, like he rises up into a cavern from the water and you fight him there, etc.

 

What do you think?

As for the rest of him, well, you don't get to see the rest of him usually.

 

But something similar to a big scalon, or maybe something similar to this for the body?:

I decided to just clear off a large portion of land and then do exactly what you recommended.

 

I'm quite pleased with the result:
