The_Vyper
I've never seen a summon-able merchant mod, but there are two others that might be of interest to you: Bag of Holding - allows you to store as many items as you want in it while also nullifying their weight. Astral Storage - a spell that, when cast, allows you to store items...elsewhere...and retrieve when desired.

Hickory
You should really check out Tamriel Travellers. It adds travelling merchants to the roads, wilderness and cities, they buy and sell 24 hours a day. You can even buy SI gear in Tamriel, if you choose that option. It's great to come across a friendly face in the middle of the night after a bout of pillaging. Also, if you still want carry-all bags, check out Automagic Bags. Far more sophisticated than Bag Of Holding.
SavageArtistry
I've never seen a summon-able merchant mod Really? All you gotta do is search for "summon merchant." There are 3 mods that come up. I use this one. http://www.tesnexus.com/downloads/file.php?id=30302

chaospearl
I use DS Storage Sacks, which is similar to Automagic Bags except that it lets you choose what to put into each bag rather than automatically having a bag for keys, a bag for ingredients, etc. You can also adjust the weight multiplier for each individual bag - if you want one bag to make everything you put inside weigh nothing, but another bag's contents should weigh one-half their actual weight, and yet a third bag's contents should weigh one-third of actual, you can do that. You can also name the bags whatever you want, and you get up to 10 of them, including one bag that you can sell the contents to any merchant just by selling the bag, and then the bag is returned to you, empty. I like realism so my character has a knapsack, a belt pouch, a quiver, and an otterskin medicine pouch (kudos for getting the reference). I also keep one of the bags called "an old sack" and use it to put away all the mod-added configuration items. I hate seeing RGO Config Ring and Traveller's Control and such in my inventory but it's convenient to keep them along so I don't have to write down 87 different console commands for getting the config item back if I've ditched it. I just stuff the rings of config into the sack, put the sack in my knapsack and never see it again unless I need to configure something.
