One of the mods I've downloaded keeps deleting core files

c) My issue, in the end, was neither a mod nor the NMM.

It was with a corrupted file sector on my 2TB bulk storage drive ("Hegra") that I use for programming retention.

This sector was causing the STRINGS file to be corrupted on backup.

Now that I've cleaned that drive and marked the corrupted sector from use, I have no problems.

I also discovered what was at fault part-way through my posting in this thread; hence the edited post.

If you actually had a visibly bad sector on your drive, you want to replace it immediately. That is not a good sign....

Conventional wisdom, yes. It's a nonessential storage, is difficult to pull out, and has had corrupted sectors since 2014. Given that it's lasted me a year with very infrequent issues, I think I'll just use it until it burns out instead of advocating waste in favor of negligible improvement to stability.
