Well the servant MOD is started after the main Quest. As for evil it depends on how "Evil" you want to be. You cans steel and murder outside the limits of the quests. if your infamy get larger than your fame you can't heal at the alters. Many times you can get away with a lot just by paying the fine. That is on the low end of morality, but not very evil. The Thieves Guild is a laugh. They are all, obviously, based off of Robin Hood. Among the many victims claimed in the DB storyline, you will find a rapist/murderer; a pirate; a marauder warlord; someone who killed a homeowner in their basement; an accomplice to racially-based torture and killing; a necromancer; and a dozen assassins. The Dark Brotherhood does more to combat injustice than the Fighters' Guild does, literally— the bulk of the FG quests deal with the competing Blackwood Company, punctuated with a few "fetch this" quests.
