Being a deadly assassin/mage, I don't use much armor.

A quick shield spell provides me all the protection I need, and my extensive collection of poisons turns my elven dagger into a weapon suitable for all occasions.

No creature can stand against my knowledge of the venomous art of poison-making.

My favorite character's combat gear is a Cheydinhal Guard Cuirass/Shield with leather gauntlets, greaves, and boots. Occasional headgear is the Green Hood. All enchanted, of course. Primary weapon is an enchanted Black Bow (same look and damage of a Fine Steel, but higher durability and 2 pounds lighter) fitted with Iron Arrows, with Steel-grade blades for backup. Steel Dagger enchanted with Drain Health 100, Fire Damage, Weakness to both Fire and Magic 100%, and Soul Trap— all intended for the finishing blow or face-to-face fast-draw.

 

My first character gallivanted around in Steel-grade armor with Fine Steel blades, then switched over to Blackwood Armor and Silver when the opportunity arose. In his abortive Dark Brotherhood run, this was his alternative to the Shrouded gear.

As far as vanilla Oblivion goes...

 

Fur armor (usually just the cuirass, greaves, and boots, sometimes the gauntlets and shield, and only very rarely the helm), Fine Iron bow, Iron arrows, and Steel dagger/shortsword (Elven dagger/shortsword when available). When not expecting melee combat or cold weather, no armor (except for the shield, and that used only in conjunction with the shortsword- never with the dagger)- wearing instead the huntsman outfit. Never any jewelry, except when the use of a ring to transport a bunch of loot becomes necessary- which it rarely does, since in recent play-throughs my characters have become increasingly averse to picking up every shiny trinket along the way.

 

There just aren't any other armor/weapon combos that seem to fit the characters I always wind up playing. It doesn't matter most of the time- most enemies don't get close enough to inflict any damage, if they ever catch sight or sound of me at all. Still, a high alchemy stat ensures that even the weakest arrows and the third-weakest bow in the game remain one-shot lethal against almost any regular foe. As for enchantments... well, none. My chars hate being dependent on others and never have a high enough armorer stat to fix enchanted gear... plus, there's the whole business with soul gems requiring soul trap spells or enchantments of their own (the mysticism stat has never breached 10 for me, in contrast to the 100 I end up with in Illusion and the 25-50 in restoration or destruction), and my chars also like to travel light. So, out with all the assorted crap that gets lugged along just for the upkeep of other crap- basic gear and a handful of repair hammers will do me just fine.

I tend to use RealSwords weapons because they always work with whatever my character wears. Not to mention the fact that they weight half as much as their stock counterparts. I never enchant my weapons though (soul gems are too much of a pain to fill, and I don't like to rely on the pay services).

 

Fur, Leather, Steel and Blackwood are my preferred armours. A lot of my stuff is modded, so I can't even name most of it. Most of my gear falls victim to weight-reduction mods (I can't stand travelling normally with more than 150 encumbrance).
