How to set weight of ammo back?

simply removing the mod will restore the weight of all ammo, unless it was done via scripts. which is doubtful

accordingly said mod has a fomod, so re-install it, and this time dont pick the weightless ammo option (assuming it is an option).

or alternatively, open the mod in question with FO4Edit - on the main plugin selection window that popsup immediatly upon Fo4Edit - right click on any plugin and click on select none option - then locate the mod in question - tick the box next to said mod - then click on ok - wait for it to load - click on the plus sign next to the mod - locate the Ammunition Category - click on the plus sign next to the Ammunition Category - then click on each Ammunition Record Entry (that each gun uses) - on the right window you should see Weight for each Ammo Record entry you click on - simply drag the weight value from the Fallout 4.esm value to the mod in question Value - simply click on the value and drag it to the value for the mod, do the same for each Ammunition record entry (thats all ammo that shows up in the Ammunition Category)

to make this more simple, the first value you see will be the vanilla weight, the second value will be what the mod set it to, you can copy the vanilla weight into the mod weight (by click on the vanilla weight value, and dragging it into the modded weight value, which will be the mod you have loaded), which will then set the modded values back to vanilla, simply by clicking on the value it self, and dragging it into the next value, or alternatively you can right click the modded value, and set it to whatever weight you want.

do the above for all ammo, then close fo4edit, ensure the box is ticked next to the mod, and click ok, now the mod will have default weight values for all weight you changed.

Note: this post is aimed at someone that has never used Fo4Edit before, as such that is why it goes into great detail over something very basic. it is actaully far quicker and easy to do, then it would take to read this post a few times.
