I would just do a mod search under the 'immersion' category and sort by endorsements and date published.

I tend to have so many mods installed that I genuinely don't know which ones to recommend anymore.

 

One of my must-have mods for my playthroughs has always been Legacy of the Dragonborn.

Though you may want to hold back on it, as Version 5 which will overhaul essentially everything and require a new save (there will be no ability to update from the current to V5 once it comes out)

V5 should come out very soon, it's planned to drop late September or early October, so I'd reckon 1-4 weeks if everything works well for the Legacy team.

 

In the meantime you may want to check out these mods which are supported by Legacy, as they are all amazing mods to have on their own. (I am unsure which of them will be compatable when V5 comes out)

If you're looking for follower mods, there are 3 I recommend and always have in my playthroughs.

Inigo, an old favourite when it comes to follower mods.

Auri (Song of the Green), a female Bosmer Elf, who takes her dietary and cultural devotion to Y'ffre very seriously (Think of the opposite of an extreme vegan where they dispise eating plant matter)

Lucien, The newest of the 3 followers linked, a male Imperial scholar, who as a follower, kind of hires you, instead of the other way around. He will grow with the player, going from a meak and scared scholar into a powerful follower.

I choose these 3 followers specifically because all 3 of them have dialogue and banter with each other, which makes your party feel more alive and part of the world, along with their different upbringings of Tamriel.

Thought I gotta admit, they can be a bit too talkative during quests when listening to an NPC.

I even always have them as the same playstyle.

Oh, totally forgot. What's up with this Vortex thing? Should I be using that instead of Mod Organizer? Is there an updated STEP? Do people still use STEP?

I'm relatively new to Skyrim (since this past spring) but I've had no issues with Vortex. Many of the "elders" seem to use MO2 but I wonder if that's not a familiarity thing over functionality. Vortex made this easy for me. I have ~240 mods installed. Game works great

 

But I'll freely admit I'm not part of the Skyrim-leet, so grain-of-salt rules apply. "Should" is subjective.
