The "culprit" is a texture named "enbsunsprite.x" (in most cases it's "enbsunsprite.bmp"). This texture is used for ENB lens flare. Usually it's in the "enbseries" folder. I don't know if this was a joke by Boris, the creator of ENB, or if someone else made this image. You can simply replace the "enbsunsprite.x" file with the corresponding texture of a different enb. Download an ENB preset manually, extract the archive with 7zip or a similar program, find the "enbsunsprite" texture and replace the rabbit in your "Skyrim SE/enbseries" folder with it.
