So I finally got my smithing skill to 100 and made my dragonscale armor right away, improved it to legendary aswell as my dragonscale sheild and finally upgraded dawnbreaker to flawless, bearing in mind none of my armour is enchanted I just killed a giant a 3 mammoths without even having to heal, I'm not complaining as its made my life easier but seriously that is an epic jump in power considering I'm level 31, do I really need to be that hardcore?

It is a pretty intense jump in power. The difference between having an unenchanted basic set of light or heavy armor, compared to legendary upgraded gear is a pretty serious markup in your defensive capability. But keep in mind, at 100 smithing, you're supposedly the greatest smith in all of Skyrim, no smith can teach you anything you don't already know. Plus, you're using materials harvested from dragons. Your armor is the the most legendary make of the era.

And regardless of how strong your armor is, giants and mammoths are nothing compared to a leveled spellcaster. You'd still need to be careful around them. If worse comes to worse, you can amp up the difficulty.

Curious.. Why did you pick Dragonscale over Glass? Glass is superior to Dragonscale in every way. Sure, Dragonscale offers a small bit more protection, but that is entirely negligble since you can get max armor rating with both glass AND Dragonscale without having 100 Smithing. It makes even less sense beause you're using a Shield. That means you need even less Armor rating to max out protection.

But I digress. Unless you wanna be a human/Dragon ragdoll, I highly suggest Heavy Armor, because you'll be The Ebony Warrior's play thing without that Tower of Strength.

EDIT: Dragonscale weighs more than Glass. This isn't a problem if you have 100 Sneak and every perk and 100 Light Armor, then it matters not, but if you are micro managing your perks, you should reconsider that. The difference 2 points of weight makes to a pair of boots is substantial if you don't have Muffle enchants or the right perks.
