This should set you on the right path. It covers everything from installation on down. There is a "tutorial hub" link, which will take you to a list of more job-specific tutorials, and there are many more that you don't see, but can find with the search box in the top right. (Searches this series of pages, not the rest of the web.)

If you prefer video tutorials, Darkfox127 makes a nice series on youtube.

With respect to installation and use of xedit, including esl, see Gamerpoets channel on youtube, for very good, thorough, step-by-step tutorials on modding tools.

Essentially, when you start up the creation kit and make changes, as soon as you hit file > save, give it a name, you've created your first .esp, and from there it's a matter of keeping it for personal use or uploading it for others to use.

How to create an esp for what though? If you're making patches for say, armors, weapons, misc items, food items, etc. learn how to use xEdit. Maybe it's just me but back when I got into this I found pretty quick you can right-click any reference in the left column of xEdit and copy as overwrite, into a new mod, name it something relevant. Choose the option for an esp with esl flag if you're just doing overwrites. Make your changes in the new esp. Done.
