Is THIS script possible?

So, I want to make a Super Mutant companion where you can customise his appearance with the various different super mutant models in-game, akin to a clothing system

Is there a GECK function in any NVSE plugin for changing a model of a creature like this on the spot? If so, what is it? Thank you!

I don't believe you can change the physical attributes via script, but I'm thinking there could be a workaround for this.

If you created multiple creatures, all identical except for the changes you're thinking of. And then you enabled/disabled them according to the variables of your dialogue, and summoned them to wherever the conversation took place... it'd be a bit clunky, but could give you the effect you're looking for. Don't even think it would be particularly difficult.

super mutants usually  have the clothes and stuff of every super mutant variant in their ModelList so. If you copied that you could maybe have a bunch of different dialogue options asking Ur companion to change into a specific outfit or whatever and use ToggleCreatureModel + Update3D in all their result scripts

The clothing itself, I don't see being an issue. I know of a few other custom companions that do that easy enough. But I believe he was wanting to change the models/textures of the super mutants themselves, like the different faces/colors, etc. That would be a bit more difficult.
