Any Idea/Tips/Tricks to take a better screenshot?

Usually, I'm wanted to take a screenshot in-game, i take them during a dialogue when a close-up to my tav, or when a cinematic is happening, but i want to improve it, is there an app/program that you can install to have a free camera or to stop/slow down a character when they're doing something?

This might be better asked in the Baldur's Gate 3 forums here.  At the top of any forum page, click on Game Communities (on desktop ), or go to the ≡ menu > Browse > Game Communities (on mobile ).  Look for Baldur's Gate 3 there, and click Join Community by it to post there.  (Do the same for any other game forums you want to post in.)

I know in Skyrim, I open the console, and type in a command to hide/show the UI.  I don't have Baldur's Gate 3, but maybe something similar exists in it.

With the next BG3 patch, they're introducing a photo mode which will probably do just what you're asking. Due out in September I think.
