I am terribly disappointed in Bethesda

I have been playing Skyrim for a few days now and the biggest problem I have (besides the bugs that don't allow you to finish certain quests)is the fact that while Bethesda claims that the world is so full of freedom and choices, you really have very little choices when it comes to questing or just running around trying to change the land of Skyrim on your own. Here are some examples:

1. There are way too many essential characters in Skyrim. In Fallout New Vegas, most, if not all characters in the game could die and there was, where it mattered, an effect or consequence to the character or the world. In Skyrim, you can walk in to the crime-ridden city of Riften and if you're like me, expect to be able to hunt down the bad guys (Thieves Guild) and save the city and its poor inhabitants. Instead, all you can do is join the thieves guild and go around and extort the already poor people of the city. Now, if you are trying to be the good guy in Skyrim, this poses a major problem.

2. Non dynamic quests. I came across a quest in a city called Markarth that got me interested in the beginning but at the end, made me quit the game outright. This quest has you enter an abandoned house with another person that is hunting deadra and their worshipers. I won't explain the whole quest but at the end, instead of having a choice to do the right thing, you are forced to beat an old man to death TWICE or you'll just have to ignore that quest altogether. There is no 'good' ending to that quest which really upset me. Again, if you want to be a good guy, you are just SOL.

Any way, In my opinion Bethesda should have taken a page from Obsidian when it comes to the storyline and the quests/events in the world. What do you guys think? Do you even care about the quests or do you just like to go around mindlessly killing innocent bunnies?

I know the daedra quest you're talking about, but he attacks you first. I don't understand why you take issue with defending yourself. If he didn't attack you first, that means you didn't try every option to escape.

Yeah, I hate it when there is no "good guy" choice. I agree with you, there. I'm so in love with Skyrim, though, that I still won't stop playing it. I may be playing it for the next four years.

The part I'm talking about is later on in the quest after you 'rescue' the priest from the cave. I didn't take as much issue with killing the first guy but I still didn't want to do it.

Yeah, I've noticed that in this game, you're meant to just ignore quests that sound a bit shady, or not get them set in the first place, if you're trying to be a good guy. For example, the quest I think you're talking about in Markarth is quite clearly going to be for evil characters even before it properly gets under way, a demonic voice is luring you into the basement after sending a guy insane and in order to force you to kill him. From that point on, it's clear it's going to end up with you just doing evil things unless you ignore the quest. Same as the Companions quest line where if you don't want to become a werewolf, you can't carry on with them. I'm okay with that in a way, though it does feel a bit sloppy. It'd be nice if you could mark a quest complete even without having completed it - like marking an email as read without having to actually read it.

Yeah i done some things i truly didnt want to do. But i cant leave a Quest uncompleted, then there will be no resolution =/.

If a quest is evil by nature at least add lesser evil/morally gray choices as well to the resolution of the quest. Then again with my moral standings i cant even do most of the Thieve/Brotherhood Quest at all.

Just think of it this way; I'll now set you an evil quest: "KhaoticHero, I give you the quest to go outside and kill 3 people". There, now you have a quest you'll never complete, but it doesn't feel bad, does it? You just ignore my crazy request. That's all you're doing in the game, too.
