I'm making a character and im using the become high king of Skyrim mod so he's going to be king. Do you think I should use a two handed greatsword or a 1 handed sword and a shield?

My people have always put a great reliance on a shield. Wouldn't work without one.

It'll come down to personal preference. with 1h and shield you do a little less per hit but you swing much faster and you can block with shield (not to mention shield is a extra enchantable item). Where 2h will do massive dam per hit but you swing much slower and can not block (at least not vary well). Next thing you will want to thing of is what class/role do you want to play as, 1h with shield is more tanky or fit paladin builds wonderfully. Where 2h is more berserker style play.

Well only you can decide whats best.

 

I would personally go with a shield cause it puts a bit more tactic in combat, While Dual wielding is mostly button mashing.

 

Also when you find one of the really good shields like Glass,Ebony or Deadric youll get exellent protection.

In vanilla Skyrim, the problem is that you cannot have a 2-h weapon and a torch equipped. Oblivion had a great mod that simply had you drop the lit torch if you had a torch and a 2-h weapon equipped and you 'drew the weapon'. Worked wonderfully. I was sure it would be in Skyrim. I was wrong. Several mods allow this in Skyrim.

well having a 2 handed weapon makes it alot easier to dual wield magic easy, So its a good idea for a spellsword, Besides that I would go shield cause it can block arrows, Make peoples moves go slow so you can hit them with your shield and if your block is high enough stun them. so yeah it can also make switching to a bow a pain in the butt to sometimes. but more of a pain is dual casting for more potency with the magic perk.
