I'll only answer to number 1. For Stealth you can try:

Phitt's new Stealth Penalties: http://www.tesnexus.com/downloads/file.php?id=35792,

Jog's Stealth Overhaul: http://www.tesnexus.com/downloads/file.php?id=6359,

and Zumbs Lockpicking OBSE: (not precisely stealth but I find it great concerning lockpicking) http://www.tesnexus.com/downloads/file.php?id=17894. (They are all compatible between one another).

 

Also, for an archery mod I suggest Duke Patrick's Combat Archery: http://www.invision.tesalliance.org/forums/index.php?/files/file/514-duke-patricks-combat-archery/. However, expect a completely different archery experience, and I suggest you thoroughly read through the read-me and all the functions the mod brings.
