What about your computer cooling system? is it sufficient enough to maintain acceptable temperature for your GPU/CPU/computer while playing heavily modded skyrim? This is just a hearsay... but I heard from someone that they solved this random freezing problem by upgrading their cooling system or placing a desktop fan directing to the GPU/CPU (remove the cover of computer and exposing the interior, of course). You cannot get Skyrim(Oldrim) in steam anymore. Better get that Skyrim Special Edition (SSE). As for the mods, there should be plenty of mods available in SSE. No need to go Oldrim mods unless you really want them. Most Oldrim mods should be compatible to SSE unless the mod author stated otherwise. In my opinion, all Oldrim armors and textures mods should be compatible to SSE (if you're using manual install).

usually each game like GTA V should contain some kind of info like recommended PC specs (RAM 4GB, GPU 1GB, and etc etc). Can you confirm if you can browse those mod pages on your other computers/phones/tablets? If no issues, probably your computer with freezing problem is very slow. If they have same issues, your internet connection is probably slow/weak.

As far as I know, downloading vortex is optional. You don't have to if you don't want to. Manual installation of mods is still good and it is more effective. Installing only the certain files [within the mod(s)] that you want and deleting other files to save space and esp etc (...if you're knowledgeable).

It depends on what kind of armor mods that you want to install.... if just adding armor mods and you have all the required mods, then it should be fine (actually, you may experience CTD once after installing armor but it is within expectation .. just launch the game again, it should be fine.) If adding armor mods and you don't have all the required mods to run that armor mod, then you will get CTD.

Probably feet mesh file/ texture dds is missing. Install feet mesh nifs/texture dds.

Looks like body is invisible. If it is just missing mesh, reinstalling proper mesh should solve it. If you messed around with the body slot, you should reconfigure it again so the mesh body slot matches with armor/armor addon in Creation Kit.

It should be compatible to SSE ... in theory. Be sure to backup your SSE files. You can try it yourself by manually installing it into your data files and play SSE.
