This seems a little odd - why not port the sites (behind the scenes) then just redirect the dns entries and CDN's? Or possibly put some node.js servers as proxies and flip the route entries? Easier backout too if things go wrong.

Because we're completely remapping the database. Once we begin work any database entries will be lost and ergo it's better to take the sites down to prevent data loss than to keep them up and deal with people saying they've lost what they did over the past 2 hours.
